2019 Tilting at Windmills
Winemaker Notes: Deep purple-ruby color with intensely perfumed aromatics: framboise, kirsch, black cherry, spice, dark chocolate, and minerals. Ripe lush tannins from the Grenache and Syrah and some slightly firmer tannins from the Cabernet Sauvignon interplay beautifully with the vibrant acidity and higher fruit expression. The palate is rich and expansive with dominant notes of framboise, kirsch, cassis jam, garrigue, and licorice. There are also secondary notes of graphite, bacon fat, and espresso. The finish is very long with notes of kirsch, scorched earth, and white pepper. Like previous vintages, this is a decadent wine with refreshing balanced acidity and great flavor delineation. It will not disappoint. Should hit maturity in 7-9 years, will hold for 15+ years.
Technical details: the wine had a pre-fermentation maceration of 138 hours and was punched down by hand 3 times each day during macerations and fermentation.100% native ferment. All individual wine components, including free run and press fractions, were kept separate until final blending. The oak profile is 40% new French oak (predominantly from Troncais and Alliers) and 60% neutral French oak. The wine was not racked and remained on its lees until bottling. The wine was very lightly filtered to capture any remaining lees. The wine has not been fined. The alcohol is 14.8%, pH is 3.76, and the titratable acidity is 6.0 g/L.
