2011 Dream Deferred

2011 Dream Deferred
2011 Dream Deferred

Winemaker Notes: 100% Chardonnay from Wallula Vineyard, Horse Heaven Hills. A lovely, serious style of Chardonnay with some exuberant fruit character of the vintage coupled with excellent depth and richness. The bouquet leaps out of the glass with notes of ripe pear, peach, pineapple, honeysuckle, spice, and vanilla. Sublime palate richness and depth from extended lees contact and active batonnage. On the palate, notes of ripe pear, pineapple, nutmeg, brioche, tangerine peel, and hazelnut are complemented with refreshing taut acidity. The finish is superbly long with notes of wet stone, brioche, and tangerine peel. A very complex, rich, concentrated style with interesting tension. Drinking great now, should hit maturity in 5-7 years.

Fermentation: The clusters were pressed and the juice settled for 12 hours. 30% of the wine went through secondary fermentation. The wine was not racked until bottling and no fining agents were employed. The wine was very lightly filtered to capture any remaining lees. Harvest date: September 20, 2014.

Cooperage: The wine was barrel fermented: 70% once used French oak puncheon (Troncais), 30% stainless steel. The wine was aged on the lees for 19 months with weekly batonnage.

They produce two whites, both of which are noteworthy. More serious and classy, the 2011 Chardonnay Dream Deferred is 100% Chardonnay that was fermented in 30% new French oak, 30% neutral oak and 40% stainless steel, then aged – on lees – for 19 months with weekly batonnage. Subtle and reserved at first, it opens up nicely in the glass and offers textbook apple, lime, hints of brioche and buttered almond-like aromas and flavors. Classy, rich and balanced, with a building, medium-bodied mouthfeel and outstanding length, it is one solid Chardonnay that should drink nicely for 4-5 years. Drink now-2018

Good pale yellow. White peach, nectarine, spices and flowers on the nose. Shy and precise on the palate, with citrus fruit and underripe pineapple flavors lifted by bright minerality. Nicely detailed wine with a sneaky rising finish and a light touch. Winemaker Billo Naravane, who is a fan of Chablis and Puligny-Montrachet, picked this chardonnay fruit on the early side. The wine aged on its lees for 19 months
