2014 Tilting at Windmills
Winemaker Notes: Dark purple-ruby in color. Intensely perfumed aromas of kirsch, blackberry, black currant, red plum, spice, vanilla, and minerals. Ripe lush tannins and an expansive palate with notes of cassis jam, black raspberry, blackberry, plum, kirsch flavors and notes of graphite, licorice, roasted herbs, and violets. The finish is very long with notes of black cherry, scorched earth, and white pepper. A decadent mouthful of wine with refreshing acidity and great flavor delineation. Should hit maturity in 6-8 years, will hold for 15+ years
Fermentation: The wine had a pre-fermentation maceration of 145 hours and was punched down by hand 2 times each day during macerations and fermentation. All individual wine components, including free run and press fractions, were kept separate until final blending. The wine was not racked and remained on its lees until bottling. The wine was very lightly filtered to capture any remaining lees. The wine has not been fined.
Cooperage: The oak profile is 40% new French oak (predominantly from Troncais and Alliers) and 60% neutral French oak.
