2013 Principia Reserve Syrah
Winemaker Notes: Dense, dark purple color with bouquet of huckleberry, blackberry, tar, bacon fat, Asian spice, black plum, and scorched earth. There are also hints of floral tones. The palate delivers on the expectations of aromatic complexity with well delineated flavors of blackberry, black raspberry, cigar tobacco, garrigue, black olive, espresso, bacon fat, black pepper, dark chocolate, and leather. The very long finish resonates with savory notes of truffle, bacon fat, and cigar tobacco. Impressive structure with exquisite balance sums up the wine nicely. This wine will continue to improve for the next 8-10 years and should drink well for the next 15-20 years.
Fermentation: The wine had a pre-fermentation maceration of 128 hours and a post-fermentation maceration of 130 hours. The wine was punched down by hand 3 times each day during macerations and fermentation. All of the lots in the blend were fermented with native yeasts. All individual wine components, including free run and press fractions, were kept separate until final blending. The wine achieved its sparkly brilliance from 3 judicious rackings, no fining agents were employed. The wine was very lightly filtered to capture any remaining lees.
Cooperage: The wine had an elevage of 31 months in French Oak. The oak profile is 25% new French oak (predominantly from Troncais and Alliers) and 75% neutral French oak.
