2013 Doctrina Perpetua
Winemaker Notes: 100% Syrah, Bacchus Vineyard, Columbia Valley. Bacchus Vineyards is one of the most consistent vineyards we work with; it delivers intense Syrah every year. Deep, opaque purple with an intense bouquet of blackberry, huckleberry, tar, truffle, vanilla, and violets. Very full-bodied with high palate intensity, high complexity and substantial yet silky tannins. On the palate there are focused notes of ripe blackberry, huckleberry, black raspberry, espresso, dark chocolate, vanilla, minerals, and earth. This is a big, powerful wine that finishes with great length and refreshing acidity. Properly cellared this wine will hit maturity in 8-10 years and should easily hold for another 10 years after that.
Fermentation: The wine had a pre-fermentation maceration of 169 hours and a post-fermentation maceration of 60 hours. 100% Native fermentation. The wine was punched down by hand 3 times each day during macerations and fermentation. All individual wine components, including free run and press fractions, were kept separate until final blending. The wine achieved its sparkly brilliance from 4 judicious rackings, no fining agents were employed. The wine was very gently filtered using crossflow filtration.
Cooperage: Elevage was 30 months in 100% once-filled French oak puncheons.
