Winemaker Notes: The 2007 Principia exhibits incredible aromatic and palate complexity combined with great structure and a long silky finish. The bouquet offers meaty wild game notes with blackberry, truffle, and white pepper. The palate’s extraordinary silky texture envelops flavors of grilled meats, blackberry, kirsch, cola, spice, minerals, and earth. The resonant, silky finish lingers for approximately 2 minutes. The wine is a testament to the unique terroirs of Walla Walla and Washington. The composition is 100% Syrah sourced from the following vineyards: Les Collines Vineyard, Seven Hills Vineyard, Lewis Vineyard, Double River Ranch, and Portteus Vineyard.

Fermentation: The wine had a pre-fermentation maceration of 96 hours and a post-fermentation maceration of 115 hours. The wine was punched down by hand 3 times each day during macerations and fermentation. All individual wine components, including free run and press fractions, were kept separate until final blending.

Cooperage: The oak profile is 25% new French oak (predominantly from Troncais and Alliers) and 75% 3-year neutral French oak. The wine achieved its sparkly brilliance from 5 judicious rackings, no fining agents were employed. The wine was very lightly filtered to capture any remaining lees.

Good deep red-ruby. Reticent but ripe aromas of cherry, flint and pepper. Sweet, silky and deep, with sexy cherry and pepper flavors complemented by subtle oak. Finishes very long, with excellent tannin management and a lingering peppery nuance. This wine got a six-day cold soak and then spent two years in 25% new oak. Stunningly successful Washington syrah, all the more impressive for being from the winery's first vintage. (My look at the 2008 about a month prior to bottling revealed an even more aromatic wine with 92-94 potential.
